Our Story
Zydeco Fire all started as an idea in 2017 when founder Al Saurage was sitting on the couch eating a bottle of hot sauce. With another bottle almost gone, Al knew he wanted something with a bit more spice. Unsatisfied with the options available, it was time to take matters into his own hands.
After months of trial and error, a few bottles that were too hot to handle, the recipe was finally perfected and Zydeco Fire was born. In May 2018 the first bottle of hot sauce was sold.
In order to keep the recipe consistent and the flavors of southern Louisiana in his hot sauce, Al grows the spiciest of his peppers in his own backyard.
Expanding the product line, Zydeco Fire launched they’re seasoning dust in the beginning of 2019.

Al & Alison Saurage
Al and Alison are Louisiana natives. Alison is originally from Delacroix, Louisiana with a love of seafood and Cajun flavors. Al is from New Orleans, Louisiana and grew up surrounded by food with most of his family working in the restaurant business. They have worked together from the beginning of Zydeco Fire to bring you the flavors of Louisiana.
