About Us

Zydeco Fire all started as an idea in 2017 when founder Al Saurage was sitting on the couch eating a bottle of hot sauce. With another bottle almost gone, Al knew he wanted something with a bit more spice. Unsatisfied with the options available, it was time to take matters into his own hands.

After months of trial and error, and a few bottles that were too hot to handle, the recipe was finally perfected and Zydeco Fire was born. In May 2018 the first bottle of hot sauce was sold.

In the beginning, in order to keep the recipe consistent and the distinct flavors of southern Louisiana in his hot sauce, Al grew the spiciest of his peppers in his own backyard. Eventually, his small garden could not keep up with demand, so he worked tirelessly to find a producer who could consistently replicate the perfect formula.

Expanding the product line, Zydeco Fire launched their seasoning dust in the beginning of 2019. In 2025, Al decided it was time to retire and spend more time with his family. He reached out to the one person he felt could keep his vision alive and do the brand justice. Zane Galbert and his wife Danielle are now proud to carry on the Zydeco Fire tradition with their friends, the Robinsons.

Zane and Danielle are residents of Slidell. Both born and raised. Zane retired from the U.S. COAST GUARD 3 years ago and Danielle is a stay at home mom with an Entrepreneurial attitude.

Scott & Tara are originally from Texas. They moved to Slidell in 2014 after falling in love with the people, culture, and food in southeast Louisiana. They are avid tennis and golf players and fans. They love to travel, cook, fish, and try new breweries. We are excited to partner with our great friends to continue this legacy that Al has left us with.
